OYSTER VESPER
A coastal take on the classic Vesper. Marine 01 Oyster Shell Vodka joins London Dry gin, Cocchi Americano, and fino sherry, finished with a barspoon of 20% saline solution to echo the bright brine of a freshly shucked oyster. Created at Douro on Portland’s waterfront, it’s an elegant companion to oysters, shellfish, and other coastal fare.

Method
- Chill a coupe glass.
- Strain into the chilled coupe.
- Stir all ingredients with ice for 20 to 30 seconds.
- Express the lemon peel over the glass to release the oils, then run it around the rim before garnishing..
- Garnish with lemon and olives on an oyster shell.
