OYSTER VESPER

A coastal take on the classic Vesper. Marine 01 Oyster Shell Vodka joins London Dry gin, Cocchi Americano, and fino sherry, finished with a barspoon of 20% saline solution to echo the bright brine of a freshly shucked oyster. Created at Douro on Portland’s waterfront, it’s an elegant companion to oysters, shellfish, and other coastal fare.

Garnish: Lemon twist, two olives, half oyster shell
Pairing: Oysters, shellfish, and coastal fare.

Method

  1. Chill a coupe glass.
  2. Strain into the chilled coupe.
  3. Stir all ingredients with ice for 20 to 30 seconds.
  4. Express the lemon peel over the glass to release the oils, then run it around the rim before garnishing..
  5. Garnish with lemon and olives on an oyster shell.
