The idea behind the spirits

MERROIR

The ocean’s
expression of place.

01 / Origin

Oyster farmers use the word merroir to describe how a place becomes part of what it produces.

An oyster’s character is shaped by its bay, the tides, water chemistry, and the life around it. Just as no two vineyards are exactly alike, no two stretches of coastline are either.

At Bold Coast Spirits, we believe that same idea can extend beyond seafood. We believe a spirit can express the place where it is made, not only through its water, but through the ingredients it incorporates and the processes that shape it.

Every bottle begins with a question

How can Maine’s coast
contribute something
meaningful to this bottle?

02 / The exploration

Oyster shells

Reclaimed Maine oyster shells help refine texture and structure.

Ocean botanicals In exploration

We are exploring how ocean botanicals might contribute distinctive aromas and flavor to future spirits.

Uncharted processes

New ways to transform what Maine’s coast gives us into structure, character, and flavor.

Tidal water rippling against a rocky Maine shoreline

Our goal is to explore
merroir through spirits.

Each release is another chapter in that exploration.
